CASÍN D.O.P. REDES (más información)
El queso Casín se hace con leche entera, sin pasteurizar, de gran riqueza en mantequilla y, si es posible, procedente de la raza bovina autóctona de la montaña: la vaca casina. Tras el cuajado de la leche, ésta se desuera en escurridores y más tarde es envuelta en paños, donde sigue expulsando líquidos durante tres o más días. Pasado ese tiempo, comienza el proceso de amasado de los gorollos, para lo que se utiliza la mesa o máquina de rabilar. Cuando la artesana decide que el paso de los gorollos va a ser el último, las masas resultantes se modelan dándoles forma esférica con las manos, hasta conseguir piezas circulares aplastadas de 15 a 20 cm. de diámetro, 4 a 7 de altura y entre 250 y 600 gramos de peso.

En el momento en el queso adquiere su forma definitiva, se decora con ayuda de relieves de madera hechos a mano (marcos) que imprimen sobre la masa el nombre del artesano, una contraseña, el nombre del pueblo, motivos decorativos…

- NOTA DE CATA
Visual: Pequeño queso de formato peculiar con inscripciones en su superficie. Corteza fina y casi inexistente. Pasta de color amarillento y textura firme al corte.
Olfativa: Muy aromático con notas picantes. Intenso.
Gustativa: Queso rudo y picante. Que invita a ser degustado en pequeñas porciones. En boca muy graso y persistente.

GAMONÉU DEMUÉS
Queso DOP Gamonéu elaborado por la quesería Demués, ubicada en el concejo asturiano de Onís. Un queso elaborado con leche de vaca ratina, cabra y oveja, siendo esta última la más identificativa y diferenciadora.

Se trata de un queso, como ya sabemos, ahumado, en este caso durante durante 12 días, y madurado el tiempo necesario, en cuevas naturales, lo que le aporta grandes valores fermentativos.

- NOTA DE CATA
Visual: Destaca su corteza florida con tonos ocre y destellos rojos propios de la flora endémica que afecta en su maduración en cueva. Corte firme y limpio con toques sutiles de cardenilla (azul) y textura tendente a la cremosidad que muestra un queso graso con tonos cándidos y pajizos diferenciados por las proporciones de sus leches.
Olfativa: Percibimos rápidamente los toques de humo procedente de su ahumado con roble.
Gustativa: Un queso de sabor intenso, ligeramente láctico, con grandes matices de pasto y humo.

AFUEGA'L PITU D.O.P. DE TRAPO BLANCO TEMIA
El queso Afuega’l Pitu DOP de trapo Blanco de la quesería Temia se elabora en el municipio asturiano de Grao. Un queso fácil de reconocer por su forma de calabaza, una forma otorgada por la propia acción del trapo empleado durante el desuerado del queso. Un queso elaborado con leche pasteurizada de vaca en el que predominan los sabores lácticos.

- NOTA DE CATA
Visual: llama la atención por su característica forma de calabaza, contemplada en la DOP Afuega’l Pitu; y que es consecuencia de la maduración en gasa y en suspensión. Color blanco intenso, sin corteza o con una corteza muy ligera que se integra en el propio queso. Destaca su corte irregular, consecuencia de su autoprensado por gravedad.
Olfativa: Se trata de un queso con aromas lácticos y marinos, unos olores que se potencian a medida que avanza su maduración.
Gustativa: Se trata de un queso adaptado a todos los paladares. En boca predomina la sensación áspera con tendencia cremosa a medida que atempera en boca. Un sabor dominado por una acidez equilibrada con recuerdos a nata y pasto.

PERALZOLA AZUL DE OVEJA LA PERAL
Este queso está elaborado con la mejor leche de oveja seleccionada, convirtiéndose en el único queso en Asturias en su género hasta la actualidad. Posee un carácter muy personal, distinto al inconfundible sello de La Peral. Su color blanco marfil con vetas azules forman, junto con su maduración, un conjunto rico en sabores, olores y aromas que tiene como resultado un equilibrado queso de excelente calidad. Este queso se presenta envasado al vacío en cuña de 500 gramos.

- NOTA DE CATA
Visual: Queso color blanco marfil con frecuentes afloramientos de tonos azules-verdosos consecuencia del hongo penicilium.
Olfativa: El queso Peralzola es una variedad rica en olores y aromas ovinos.
Gustativa: Queso con un sabor intenso, con abundantes retrogustos y persistente en boca. Cremoso y de textura agradable.


LOS BEYOS I.G.P. DE VACA
Tradicional queso de cuajada ácida producido bajo la Indicación Geográfica Protegida “Los Beyos”. Se trata de uno de los quesos más relevantes de Asturias.

Queso elaborado 100% con leche de vaca. Es un queso de pasta semiácida y corte irregular, ligeramente enmohecido por su parte externa, y algo graso; de corteza rugosa, presenta corte amarillo-marfil, con tendencia a escamación, tacto fino y suave, y textura sin elasticidad. De sabores y aromas equilibrados, intensos y muy agradables, resulta un queso exquisito en su punto adecuado de maduración.

- NOTA DE CATA
Visual: Se trata de un queso de porte pequeño, forma cilíndrica y bastante alto respecto a su diámetro. Forma irregular que denota rápidamente su carácter artesanal. Corte tendente al escachado y color blanco puro con una casi total ausencia de ojos.
Olfativa: Rápidamente se detectan notas ácidas como consecuencia de su coagulación. Muy agradable en nariz.
Gustativa: Redondo en boca con exquisitos retrogustos.

Elaborado con 100% Tinta Fina de viñas viejas de más de 80 años. De alta intensidad colorante, picota oscuro casi opaco. Perfil aromático muy concentrado, fruta madura en sazón, ciruelas, higos y un excelente perfume balsámico, eucalipto y tinta china. Tasting notes:

- Appearance:
It has an intense garnet color with ruby ​​edges and subtle violet hues. Its appearance is bright and shiny.

- Nose:
It offers clean and pronounced aromas of ripe red fruits - such as cherry, raspberry, and currant - combined with notes of cocoa, coffee, and spices. Well-integrated tannins and fresh acidity are appreciated, along with delicate hints of vanilla and cinnamon on a mineral background.

- Palate:
In the mouth, it shows a velvety texture that carries marked and sweet flavors in an attractive and balanced red wine. It is velvety, with a silky body and mature tannins. Its palate is fresh and concentrated, with a long finish and a modern style. It has great aging potential, estimated between five and ten years.

Winemaking:

A careful selection of the grapes in the vineyard is carried out, which are later transported to the winery in 12-kilo boxes in order to respect the quality of the fruit to the maximum. Once in the winery, the final selection on the sorting table ensures the optimal conditions of health and maturity of the grapes, before proceeding to a pre-fermentative maceration at 5 °C for five days. All this allows for greater polyphenolic extraction through gentle daily pump-overs.

The native yeasts from the vineyard carry out spontaneous alcoholic fermentation, with controlled temperatures between 26 °C and 28 °C. Viña Magna winery carries out malolactic fermentation in stainless steel tanks and oak barrels. Subsequently, the wine is aged in French oak barrels under controlled humidity and temperature conditions (75% and 14 °C, respectively), with stirring of the lees every fifteen days.

Dominated by Tempranillo and other red and white varieties from small plots of old vineyards scattered throughout various towns around the Sierra de la Sonsierra, we are faced with a blend of impressive depth and concentration that unfolds elegant, persistent floral aromas over time. Vineyard and winemaking: - Description: Old vines in small organically farmed plots scattered across different municipalities of the Sonsierra up to Laguardia (especially from Leza and San Vicente de la Sonsierra) with different types of soil and orientations. The vines are mostly Tempranillo but are also interspersed with Graciano and Garnacha, as well as other white and unknown varieties. - Age: Between 50 and 80 years old. - Soil: Marked by heterogeneity, mostly loamy with a high limestone content. - Climate: Influenced by both Atlantic and Mediterranean climates. The weather for the 2022 vintage was characterized by a very dry winter with scarce rainfall, which led to the early and uniform bud break of the vines without incidents. This was followed by a spring that was also particularly dry and a summer with several anomalous heat waves due to their prolonged duration. - The plot:
Tempranillo plot located at 630 meters altitude in Laguardia, at the foot of the Sierra de Cantabria, settled on a soil with a marked calcareous and shallow character. Sustainable viticulture is practiced, respectful of its environment, under a climate of contrasts.
- Elaboration:
The winery acts as a mere transmitter of the vineyard's character, seeking to respect the natural fermentation processes to the maximum through minimal intervention, in order to produce an authentic wine that reflects its origin. Harvesting is done manually in 11-kilogram boxes; the fermentation is carried out by gravity, using native yeasts, and malolactic fermentation takes place spontaneously in French oak barrels. The wine is aged for eight months in barrels and six months in concrete tanks.
- Villacardiel:
Villacardiel is located in a protected archaeological area, where remains of a medieval necropolis were discovered, as well as numerous dolmens and rock-cut wine presses dating from the 12th to the 15th centuries, reflecting the long winemaking tradition of the area.

+Altitud Garnacha 2021 is a red wine produced by Bodega Mikaela and Alto Horizonte, with Designation of Origin Wine from Spain. It is made 100% with the Garnacha grape.

The elaboration of this wine is a project by Micaela Rubio whose objective is to create Mediterranean wines where the singularity and freshness of the area where it is produced prevail. It is a perfect wine to accompany with meat, cold cuts, or cheese.

- Elaboration:
It all starts from the 32 microparcels located in the municipalities of Navatalgordo and Sierra de Gredos (Ávila) at 1,100 meters above sea level.

The soils on which the vineyards grow are granitic sand and the prevailing climate during 2018 was a very cold winter leading to a late vintage.

The harvest is done manually and, subsequently, it is sent to tanks made of different materials -stainless steel, concrete, and French oak barrels- for the fermentation process. It is at a controlled temperature, around 25-26ºC, and with native yeasts.

Aging is for 14 months in concrete tanks, earthenware vessels, and French oak barrels.

The harvest is carried out manually in 15 kg boxes during the early hours of the day, keeping the grapes at a low temperature until they arrive at the winery, where they are kept at -10°C before destemming.

Fermentation takes place in new 400-liter American oak barrels, with cold maceration at 8°C and daily manual pump-overs. After 12 days, the wine is gently pressed and undergoes a minimum aging of 10 months in fine-grain French oak barrels before bottling with a light filtration.

A Verdejo with a very special character. - About Quintaluna: Quintaluna is an organic white wine made from Verdejo grapes in the Rueda D.O. produced by Bodegas Ossian, founded by Javier Zaccagnini (who is also a co-owner of Bodegas Aalto). Currently, the project is part of the prestigious winery Pago de Carraovejas in Valladolid. The grapes used by Quintaluna come partly from pre-phylloxera vines between 100 and 200 years old (60% of the total) and partly from young vines with organic certification from the Council of Organic Agriculture of Castilla y León (the remaining 40%). Quintaluna, after going through the corresponding winemaking processes, ages for about two months with its lees in stainless steel tanks. During this time, periodic stirring is applied.
